Cheesy. Tangy. Bite-sized.

Ingredients

  • 3 large zucchini sliced into ¼-inch rounds
  • Extra-virgin olive oil for brushing
  • ¼ cup marinara or pizza sauce
  • ⅓ cup mozzarella, shredded
  • Dried oregano for sprinkling

How to make it

  1. Prepare the zucchini

Heat the oven to 400°F (200°C). Lay the zucchini rounds on a baking sheet and brush them with olive oil.

  2. Bake until softened

Bake for 5 minutes, until slightly tender.

  3. Top and bake again

Spread a thin layer of sauce on each slice, top with mozzarella and a sprinkle of oregano, and bake for 10 minutes more, until the zucchini is tender and the cheese has melted.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

Pat the zucchini rounds dry with paper towels before oiling so they roast rather than steam.

Serve with

A green salad for a light lunch, or on a platter with other nibbles at a party.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
