Glass bowl of creamy ambrosia salad with strawberries, pineapple, mandarin segments, coconut and mini marshmallows
Creamy. Fruity. Cool.

Ingredients

  • 8 oz non-fat yogurt
  • 1 tablespoon lemon juice
  • 20 oz crushed pineapple, well drained
  • ½ cup shredded coconut
  • 2 cups fresh strawberries, quartered
  • 2 cups fresh pineapple, peeled, cored and cut into bite-sized pieces
  • 11 oz mandarin oranges, well drained

How to make it

  1. Mix the salad

In a large bowl, fold together the yogurt, lemon juice, crushed pineapple, strawberries, coconut, fresh pineapple and mandarin oranges until evenly combined.

  2. Chill before serving

Cover and refrigerate for at least 1 hour before serving.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

Drain the canned fruit really well, or the yogurt will turn thin and watery as the salad chills.

Serve with

A potluck or barbecue spread, alongside grilled chicken or ham, or on its own as a light dessert.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
