Glasses of fresh salsas, the front one filled with orange and grapefruit pieces, red onion and herbs
Juicy. Zesty. Bright.

Ingredients

  • 1 navel orange
  • 1 ruby red grapefruit
  • 1 lemon
  • 1 lime
  • 1 teaspoon green olive tapenade
  • ½ cup red onion, thinly sliced
  • 2 tablespoons flat-leaf parsley, chopped (optional)

How to make it

  1. Peel the citrus

With a sharp knife, slice away the peel and every bit of white pith from the orange, grapefruit, lemon and lime.

  2. Free the segments

Hold each fruit over a strainer set on a bowl and slice between the membranes so the segments drop into the strainer. Then wring out the leftover membranes into the bowl to collect every drop of juice.

  3. Chop and combine

Cut the segments into ½-inch pieces and add them to the juice with the red onion, tapenade and parsley. Stir gently.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

Make it a few hours ahead and chill; stir in the parsley just before serving so it stays bright green.

Serve with

Fried or grilled fish, chicken or pork, or a bowl of tortilla chips for scooping.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
