Hearty. Gingery. Warming.

Ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 onions finely chopped
  • 12 oz chicken, chopped
  • ½ cup carrots, chopped
  • ¼ cup bell peppers, chopped
  • ¼ cup cabbage, shredded

  • ½ tablespoon ginger, chopped
  • 1 teaspoon salt
  • 1 teaspoon ground pepper

Heat the olive oil in the slow cooker (or in a frying pan if yours can't sauté) and soften the garlic and onion.

  2. Slow-cook the soup

Add all the remaining ingredients, cover with the lid and cook for 5 hours.

  3. Season and serve

Check the seasoning, then ladle the soup into bowls.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

For a change, make it with prawns instead of chicken, adding them for the last 20–30 minutes so they stay tender.

Serve with

Steamed rice or crusty bread, with a wedge of lime or lemon to squeeze over.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
