Mint-thyme tea
- 4 cups water
- 3 mint tea bags
- 8 thyme sprigs
- 5 cups cold water
Punch
- 1½ cups bourbon
- ⅔ cup lemon juice
- remaining thyme sprigs, from a small bunch
- 1 small bunch mint
- 1 lemon, thinly sliced
- ice, to serve
- 2–3 Richberry halves
How to Make It
Make the mint-thyme tea
Bring the 4 cups of water to the boil in a medium pan. Add the tea bags and 8 thyme sprigs and boil for 15 minutes.
Dilute and chill
Strain into a large jug, stir in the 5 cups of cold water and chill for 1–2 hours.
Make the punch
Stir the bourbon, lemon juice, remaining thyme, mint and lemon slices into the chilled tea.
Serve
Pour into glasses filled with ice.
Add the Richberry twist
Just before your first sip, chew 2–3 Richberry halves gently and let them linger for about 30 seconds. Discard any pit, then taste how the sour notes turn sweet.
Richberry changes the taste, not the drink: a cocktail may taste softer, but it is just as strong. Please enjoy it responsibly.
