Cranberry shrub (makes about 2 servings)
- 1 cup white vinegar
- 1 cup water
- 1 cup fresh cranberries
- 2 pods cardamom, crushed
- 4 whole allspice berries, cracked
- ¼ (1-inch) piece cinnamon stick
To serve
- ice cubes
- 8 fl oz ginger beer
- 2 fl oz lemon concentrate
- 3 fl oz vodka
- 2–3 Richberry halves
How to Make It
Make the cranberry shrub
Combine the vinegar and water in a saucepan over medium-high heat. Add the cranberries, cardamom, allspice and cinnamon stick and bring to a boil, then simmer for about 10 minutes, until the cranberries pop and release their juice.
Strain and chill
Take the pan off the heat and let it steep for 15 minutes. Strain into a container, discard the pulp, then seal and refrigerate.
Serve
Fill 2 highball glasses or copper mugs halfway with ice. Add 1 fl oz cranberry shrub, 4 fl oz ginger beer and 1 fl oz lemon concentrate to each, plus 1½ fl oz vodka for the cocktail. Stir well.
Add the Richberry twist
Just before your first sip, chew 2–3 Richberry halves gently and let them linger for about 30 seconds. Discard any pit, then taste how the sour notes turn sweet.
Richberry changes the taste, not the drink: a cocktail may taste softer, but it is just as strong. Please enjoy it responsibly.
