Strawberry Nectarine Fruit Salad

Ripe white nectarines and strawberries tossed with lemon juice, left to macerate, then finished with fresh mint. Both fruits have a gentle tartness, the kind of sour flavour Richberry loves to play with.

White bowl of sliced strawberries, nectarine chunks and blackberries topped with mint, with strawberries and blueberries beside it
Juicy. Minty. Bright.

Ingredients

  • 2–3 large white nectarines (¾–1 lb) pitted and cut into bite-sized chunks
  • 8–10 fresh strawberries hulled and quartered
  • 2 teaspoons lemon juice
  • 4 fresh mint leaves thinly sliced

How to make it

  1. Toss the fruit

In a medium bowl, gently toss the nectarines and strawberries with the lemon juice.

  2. Let it macerate

Leave the fruit to stand for 15–20 minutes so it softens slightly and releases its juices.

  3. Add the mint

Just before serving, gently fold through the sliced mint.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

Add the mint only at the last minute so it stays bright green and doesn't wilt.

Serve with

Plain yogurt, vanilla ice cream or a slice of pound cake, or as part of a brunch spread.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
