Ingredients
- 1 large cauliflower
- 6 slices bacon, cooked and chopped
- 3 jalapeño peppers finely chopped
- 1 cup cheddar cheese, shredded
- ½ cup jalapeño Jack cheese, shredded
- ½ cup mayonnaise, plus extra if needed
- 1 ½ teaspoons cayenne pepper
- ½ tablespoon Worcestershire sauce
- ½ teaspoon granulated garlic
- 1 teaspoon paprika
- 1 teaspoon mustard
- ¼ teaspoon pepper
- ½ teaspoon salt
How to make it
Par-cook the cauliflower
Cook the cauliflower until tender but still crisp, then take it off the heat. Heat the oven to 450°F (230°C).
Fill the baking dish
Break the cauliflower into florets and spread them evenly in a baking dish.
Spread the cheese topping
Mix all the remaining ingredients except the bacon in a bowl, adding a little more mayonnaise if it's too thick. Spread it evenly over the cauliflower.
Top and bake
Sprinkle the bacon over the top and bake for 20 minutes, until the cheese is bubbling. Serve warm.
