Sour cream coffee cake
Sweet moments, naturally.

Ingredients

Cake

  • 12 tbsp (1 ½ sticks) unsalted butter, at room temperature
  • 1 ½ cups granulated sugar
  • 3 extra-large eggs, at room temperature
  • 1 ½ tsp pure vanilla extract
  • 1 ¼ cups sour cream
  • 2 ½ cups cake flour (not self-rising)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp kosher salt

Streusel

  • ¼ cup light brown sugar
  • ½ cup all-purpose flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp kosher salt
  • 3 tbsp cold unsalted butter, cut into pieces
  • ¾ cup chopped walnuts (optional)

Glaze

  • ½ cup confectioners' sugar
  • 2 tbsp pure maple syrup

Directions

  1. Preheat oven to 350°F (175°C).

Grease and flour a 10-inch tube pan.

  2. Make the batter.

Cream the butter and sugar with the paddle attachment for 4 to 5 minutes, until light. Beat in the eggs one at a time, then the vanilla and sour cream. Sift the flour, baking powder, baking soda and salt together and add on low speed until just combined, finishing by hand with a spatula.

  3. Make the streusel.

Pinch the brown sugar, flour, cinnamon, salt and butter together with your fingers until crumbly. Mix in the walnuts, if using.

  4. Layer and bake.

Spread half the batter in the pan and sprinkle with ¾ cup of the streusel. Add the rest of the batter, spread it out and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.

  5. Cool and glaze.

Cool on a wire rack for at least 30 minutes, then carefully move the cake, streusel side up, onto a plate. Whisk the confectioners' sugar and maple syrup into a runny glaze, adding a few drops of water if needed, and drizzle over the cake.
