Ingredients

  • 1 pineapple, peeled, cored and sliced
  • 6 lemons, juiced
  • 8 oz (237 ml) cognac
  • 2 oz (60 ml) Jamaican rum
  • 1 pint (475 ml) brewed green tea, cooled
  • 2 oz (60 ml) peach liqueur
  • 1 (1 litre) bottle Champagne
  • 2 qt (2 litres) club soda
  • lemon wheels, to garnish
  • 2–3 Richberry halves

How to Make It

  1. Steep the pineapple

Combine the pineapple slices, lemon juice and cognac in a punch bowl and leave to stand for up to an hour.

  2. Finish the punch

When you're ready to serve, add the rum, green tea, peach liqueur, Champagne and club soda.

  3. Garnish and serve

Float the lemon wheels on top, stir gently and ladle into punch cups.

  4. Add the Richberry twist

Just before your first sip, chew 2–3 Richberry halves gently and let them linger for about 30 seconds. Discard any pit, then taste how the sour notes turn sweet.

Richberry changes the taste, not the drink: a cocktail may taste softer, but it is just as strong. Please enjoy it responsibly.

Mocktail (Non-Alcoholic)

Without the spirits and Champagne, the green tea, lemon, pineapple and soda still make a lively punch for about fifteen.
