Schooner
White and overproof rum meet tawny port, lime and papaya purée in this tall, crushed-ice drink. The port brings a dried-fruit depth, and a cherry plus a generous bunch of mint finish it off.

Ingredients

- 1 oz (30 ml) white rum
- ½ oz (15 ml) 151-proof rum
- ½ oz (15 ml) tawny port
- 1 oz (30 ml) fresh lime juice
- ½ oz (15 ml) papaya purée
- crushed ice
- Luxardo cherry, to garnish
- leafy mint sprigs, to garnish
- 2–3 Richberry halves
How to Make It
Dry shake
Add both rums, the port, lime juice and papaya purée to a cocktail shaker and shake without ice.
Swizzle
Pour into a Collins glass filled with crushed ice, swizzle with a bar spoon, then pile more crushed ice on top.
Garnish
Skewer the cherry on a cocktail pick and add it to the glass with a generous bunch of mint.
Add the Richberry twist
Just before your first sip, chew 2–3 Richberry halves gently and let them linger for about 30 seconds. Discard any pit, then taste how the sour notes turn sweet.
Richberry changes the taste, not the drink: a cocktail may taste softer, but it is just as strong. Please enjoy it responsibly.
