Roasted tomato Bloody Mary mix

  • 3½ lb Campari tomatoes
  • 2 tbsp olive oil
  • 1½ tsp kosher salt, divided
  • 1½ tsp ground black pepper, divided
  • ½ cup water, plus more if needed
  • 2½ tbsp Worcestershire sauce
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh lemon juice
  • 2 tbsp prepared horseradish
  • 1 tbsp celery seeds
  • 1 tbsp fresh lime juice
  • 2 tsp sriracha
  • 1 tsp smoked paprika

To serve

  • ice
  • 16 oz vodka
  • celery stalks, cooked cocktail shrimp, lemon wedges, olives or cherry tomatoes, to garnish (optional)
  • 2–3 Richberry halves

How to Make It

  1. Roast the tomatoes

Heat the oven to 220°C (425°F). Halve the tomatoes and spread them over two rimmed baking trays. Drizzle with the oil, season with 1 tsp salt and ½ tsp pepper, toss, turn cut side down and roast for 45 minutes, until very soft.

  2. Peel and blend

Leave to stand for 5 minutes, then pull off and discard the skins. Blend the tomatoes and their juices with the water, Worcestershire, dill, lemon juice, horseradish, celery seeds, lime juice, sriracha, paprika and the remaining ½ tsp salt and 1 tsp pepper.

  3. Adjust and chill

If the mix is too thick, blend in more water a tablespoon at a time. Taste, adjust the seasoning, then chill in a covered jar; it keeps for up to 5 days.

  4. Serve

Fill 8 pint glasses with ice, add 2 oz vodka to each and top with the Bloody Mary mix. Stir and add your choice of garnishes.

  5. Add the Richberry twist

Just before your first sip, chew 2–3 Richberry halves gently and let them linger for about 30 seconds. Discard any pit, then taste how the sour notes turn sweet.

Richberry changes the taste, not the drink: a cocktail may taste softer, but it is just as strong. Please enjoy it responsibly.

Mocktail (Non-Alcoholic)

Leave out the vodka for a Virgin Mary; the roasted tomato mix has plenty of body on its own.
