Ingredients
- 4 boneless skinless chicken breasts
- 2 cups seasoned rice (uncooked)
- 1 cup mushrooms, sliced or in pieces
- ½ large green pepper sliced
- ½ large red pepper sliced
- 1 cup broccoli, chopped
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1 teaspoon margarine
How to make it
Poach the chicken
Simmer the chicken breasts in enough water to cover for 20 minutes, until tender. Lift them out, cut into cubes and keep the broth.
Cook the rice
Top the broth up with water to make 5½ cups and set about 1 cup aside. Cook the seasoned rice, covered, in the rest until tender.
Sauté the vegetables
Sauté the vegetables in the margarine in a non-stick pan until softened, then spoon them onto a plate.
Brown the rice
Stir-fry the cooked rice in the same pan until lightly browned, then mix in the vegetables and chicken.
Bake the casserole
Pour the reserved broth into a large ovenproof casserole, add the rice mixture and bake at 450°F (230°C) for 30 minutes. Serve hot.
