Tender. Tangy. Herby.

Ingredients

  • 16 oz pork roast, chopped
  • 4 oz sweet potato, chopped
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1 teaspoon salt
  • 1 cup water

How to make it

  1. Mix the ingredients

Stir the pork, sweet potato, cider vinegar, thyme, parsley, salt and water together, then tip everything into a slow cooker.

Cover and cook for 10–11 hours, until the pork is tender and the stew has come together.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

Not a fan of sweet potato? Swap in another vegetable, such as carrot or butternut squash, or leave it out.

Serve with

Serve hot in wooden bowls topped with fresh dill, with crusty bread on the side.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
