Pork Chops and Cornbread

Boneless pork chops slow-cooked with cornbread stuffing, onion, celery, jalapeño and a little lime juice until tender. The lime gives a small sour lift, the kind of sour flavour Richberry loves to play with.

Grilled pork chop topped with basil beside roast potato wedges, a piece of corn on the cob and roasted onion
Hearty. Savoury. Lightly spiced.

Ingredients

  • Oil spray for greasing
  • 12 oz boneless pork chops
  • 1 onion finely chopped
  • 2 stalks celery, chopped
  • 1 jalapeño chopped
  • 12 oz cornbread stuffing mix
  • ½ cup chicken broth
  • 1 egg beaten
  • 1 teaspoon lime juice
  • 1 teaspoon ground black pepper
  • ¾ teaspoon salt

How to make it

  1. Brown the pork

Spray the slow cooker with oil, add the pork chops and sauté them briefly on the sauté setting (or brown them in a pan first).

  2. Add the rest

Add the onion, celery, jalapeño, stuffing, broth, beaten egg, lime juice, pepper and salt, mix well and cover.

  3. Cook until tender

Cook for 5–6 hours, until the pork is tender.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.
