Sweet moments, naturally.

Ingredients

Crust

  • 1 ¼ cups (160 g) all-purpose flour
  • ½ tsp salt
  • 5 oz (1 ¼ sticks, 10 tbsp, 137 g) unsalted butter, cubed
  • ¼ cup (57 ml) sour cream
  • 1 egg, beaten, for egg wash (optional)
  • 1 tsp cream, for egg wash (optional)
  • 1 tsp sugar

Filling

  • 6–8 tart plums and/or pluots, pitted and sliced (about 1 ¼ lb or 570 g)
  • ⅛ tsp cinnamon
  • 1 tsp lemon juice
  • 1 tsp orange (or lemon) zest
  • 1 tsp quick tapioca, or 1 tbsp flour (for thickening)
  • ⅓ cup (70 g) sugar

Directions

  1. Make the dough.

Whisk the flour and salt in a large bowl, then work in the butter with your fingertips or a pastry blender until crumbly, with no pieces bigger than a pea. Mix in the sour cream with a fork, gather into a disc, wrap and chill for at least 1 hour.

  2. Prepare the plums.

Gently toss the plum slices with the cinnamon, lemon juice, zest and tapioca (or flour).

  3. Preheat oven to 375°F (190°C).

Let the dough stand for 5 minutes, then roll it into an even 13-inch round on a lightly floured surface. Move it to a baking sheet lined with parchment or a silicone mat, or lightly buttered.

  4. Fill and fold.

Arrange the plums in circles, starting 1 ½ to 2 inches from the edge and working in to the centre. Fold the pastry edges up and over, leaving the middle of the fruit showing.

  5. Glaze and bake.

For a glossy crust, whisk the egg and cream and brush it over the exposed pastry. Bake on the middle rack for 40 to 50 minutes, until the crust is lightly browned and the filling bubbles.

  6. Cool.

Cool on a rack for 1 hour before serving.
