Ingredients

  • 3 small scoops peach or lychee sorbet
  • 10 mint leaves, plus more to garnish
  • 3 lime wedges, plus more to garnish
  • lychees
  • 2 oz (4 tbsp) rum
  • ice cubes
  • club soda, to top
  • peach slices, to garnish
  • 2–3 Richberry halves

How to Make It

  1. Scoop the sorbet

Put the scoops of sorbet into a tall glass.

  2. Muddle and shake

In a cocktail shaker, muddle the mint, lychee and lime wedges. Add the rum and ice, shake, then strain over the sorbet.

  3. Top and garnish

Top with club soda and stir gently. Garnish with extra mint, a lime wedge and peach slices.

  4. Add the Richberry twist

Just before your first sip, chew 2–3 Richberry halves gently and let them linger for about 30 seconds. Discard any pit, then taste how the sour notes turn sweet.

Richberry changes the taste, not the drink: a cocktail may taste softer, but it is just as strong. Please enjoy it responsibly.
