Ingredients
- 1 cup blueberries
- ¾ cup chopped strawberries, stems removed
- ¾ cup raspberries
- 2 tbsp lemon juice (from about ½ lemon)
- 1 ½ tbsp chia seeds
- 2 tbsp sugar
Directions
Cook the berries.
Stir the blueberries, strawberries, raspberries and lemon juice together in a medium saucepan. Cook over medium heat for 10 to 12 minutes, stirring now and then, until the fruit breaks down into a runny, syrupy sauce.
Mash if you like.
For a smoother jam, crush any large pieces of fruit with the back of a wooden spoon or a fork.
Stir in the chia seeds.
Take the pan off the heat, stir in the chia seeds and leave for 10 minutes to thicken. Taste and add a little more lemon juice if needed.
Cool and store.
Let the jam cool to room temperature, then spoon it into a jar and refrigerate. It will keep thickening in the fridge.
Keep the jam in a sealed jar in the fridge for up to 3 to 4 weeks.
