Mint and Lime Mojito
A mojito built on a rum-steeped mint paste, strained over ice and finished with lime and soda water. Herbal and lively, and the lime turns softer, almost candied, once you've chewed a few Richberry halves.

Ingredients

- 10 large mint leaves, plus extra to garnish
- 2½ oz white rum
- 1 tbsp fresh lime juice (from ½ lime)
- ice
- soda water, to top
- fresh mint sprigs, to garnish
- thin lime wheels, to garnish
- 2–3 Richberry halves
How to Make It
Make the mint paste
Grind the mint leaves with ½ oz of the rum in a mortar and pestle until they form a paste.
Steep
Stir in the remaining 2 oz rum (move everything to a small bowl if the mortar is too small) and leave it to steep for about 5 minutes.
Strain over ice
Fill a glass with ice and strain the minty rum into it through a small fine sieve, pressing the paste with a spoon to get every last drop.
Finish
Add the lime juice, top with soda water and stir. Garnish with a lime wheel or a sprig of mint.
Add the Richberry twist
Just before your first sip, chew 2–3 Richberry halves gently and let them linger for about 30 seconds. Discard any pit, then taste how the sour notes turn sweet.
Richberry changes the taste, not the drink: a cocktail may taste softer, but it is just as strong. Please enjoy it responsibly.

Mocktail (Non-Alcoholic)
