Lemon infusion (makes about 8 oz)
- 1 cup water
- peel of 1 lemon
Margaritas
- 4 cups ice
- 6 oz fresh lemon juice
- 6 oz tequila
- 4 oz lemon infusion
- 1 oz triple sec
- salt, for the rims
- 2–3 Richberry halves
How to Make It
Make the infusion
Warm the water and lemon peel in a small pan over medium-high heat without letting it boil. Take off the heat and leave for 10 minutes.
Strain and cool
Discard the peel, pour the infusion into a jar and chill until completely cold. It makes about 8 oz, enough for two batches.
Rim the glasses
Wet the rims of 4 glasses and dip them in salt.
Blend and serve
Blend the ice, lemon juice, tequila, 4 oz lemon infusion and triple sec until smooth, then divide between the glasses.
Add the Richberry twist
Just before your first sip, chew 2–3 Richberry halves gently and let them linger for about 30 seconds. Discard any pit, then taste how the sour notes turn sweet.
Richberry changes the taste, not the drink: a cocktail may taste softer, but it is just as strong. Please enjoy it responsibly.
