Ingredients

Cookie crumb crust

  • 3 cups vanilla cookie crumbs
  • ¾ cup butter, melted

Filling

  • 1 cup whipping cream
  • 2 rounded tsp icing sugar
  • 1 tsp vanilla extract
  • 9 extra-large egg yolks
  • 2 (10 oz) cans sweetened condensed milk
  • 1 cup lime juice
  • zest of 3 limes, finely minced

Vanilla whipped cream

  • 1 cup whipping cream
  • 2 rounded tbsp icing sugar (powdered sugar)
  • ½ tsp vanilla extract
  • lime slices, to garnish

Directions

  1. Preheat oven to 325°F (165°C).

Line the base of a 10-inch springform pan with parchment paper and lightly grease the sides.

  2. Bake the crust.

Mix the cookie crumbs with the melted butter and press into the base and about ¾ of the way up the sides of the pan. Bake for 10 minutes, then set aside to cool.

  3. Whip the cream.

Whip 1 cup cream with 2 teaspoons icing sugar and 1 teaspoon vanilla to soft peaks. Keep it in the fridge.

  4. Make the filling.

Whisk the egg yolks in a stand mixer on high for about 5 minutes, until pale, light, and foamy. Slowly whisk in the condensed milk, lime juice, and zest, then gently fold in the whipped cream.

  5. Freeze overnight.

Pour the filling into the cooled crust and freeze overnight.

  6. Top and serve.

Beat the remaining cream, icing sugar, and ½ teaspoon vanilla to firm peaks. Pipe or spoon it around the edge of the pie, or add a dollop to each slice, and garnish with lime slices.
