Wooden bowl of chicken drumsticks in a creamy sauce, topped with lime slices and cracked pepper
Zesty. Garlicky. Juicy.

Ingredients

  • 2 lb chicken thighs, boneless or bone-in (or use chicken breasts or legs)
  • ½ cup freshly squeezed lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt, plus extra to taste
  • 1 teaspoon black pepper, plus extra to taste
  • 2 tablespoons butter, melted
  • 4 limes zested
  • ½ cup fresh cilantro, chopped
  • Lime wedges to garnish
  • Cooking spray for greasing

How to make it

  1. Marinate the chicken

Put the chicken, lime juice, garlic, Worcestershire sauce, salt and pepper in a large zip-top bag, seal and shake until the chicken is well coated. Chill for at least 30 minutes, or up to 8 hours.

  2. Arrange in the dish

Heat the oven to 425°F (220°C) and grease a baking dish with cooking spray. Lift the chicken out with a slotted spoon, keeping the marinade, lay it in the dish in one layer and brush with the melted butter, adding a little more salt and pepper if you like.

  3. Bake and baste

Bake for about 20 minutes, brush with the reserved marinade, then bake for another 20–30 minutes until cooked through and the juices run clear. Timings vary with the cut.

  4. Finish and serve

Scatter over the lime zest and chopped cilantro, and serve with lime wedges.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

The marinade has touched raw chicken, so only brush it on while there is still plenty of baking time left.

Serve with

Rice or quinoa, with extra lime wedges for squeezing.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
