Ingredients
- 4 boneless skinless chicken breasts
- 1 tablespoon peanut oil, for the chicken
- 1 dash salt
- 1 dash ground black pepper
- 1 hot pepper finely chopped
- 4 large bell peppers (red orange, yellow and green)
- 1 teaspoon peanut oil, for the peppers
- 1 cup cheddar cheese, shredded
- 2 tablespoons hot sauce
- 2 tablespoons light sour cream
- 10 medium wheat tortillas
How to make it
Brown the chicken
Trim any fat from the chicken and slice it. Stir-fry in 1 tablespoon peanut oil over low heat until browned, seasoning with the salt, pepper and hot pepper as it cooks.
Soften the peppers
Meanwhile, slice the bell peppers and sauté them in 1 teaspoon peanut oil in a second pan until tender.
Bring it together
Add the peppers to the cooked chicken and simmer on low heat, stirring now and then. Stir in the cheddar, hot sauce and sour cream until blended, then take the pan off the heat.
Fill the tortillas
Warm the tortillas in the oven, spoon in the filling and roll them up.
