Ingredients
- ¼ cup slivered blanched almonds
- 1 lb cucumbers, peeled if the skin is bitter
- 1 teaspoon kosher salt, plus more to taste
- 1 teaspoon garlic, minced
- 20 green grapes halved
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sherry or white wine vinegar

How to make it
Salt the cucumbers
Halve the cucumbers lengthwise, scoop out the seeds (halve them again if large) and cut crosswise into ¼–½ inch slices. Toss with 1 teaspoon kosher salt in a large bowl and leave for 20–25 minutes.
Rinse and dry
Rinse off the salt, drain well and press out the extra moisture with paper towels.
Toast the almonds
Toss the almonds in a small pan over medium-high heat until golden and fragrant, then tip them into a bowl to cool.
Toss and serve
Mix the cucumbers, almonds, garlic, grapes, olive oil and vinegar in a large bowl, add salt to taste and scatter with chives.
