Cilantro Lime Dressing

A punchy blender dressing of lime juice, cilantro, jalapeño, garlic and ginger, smoothed with olive oil. It doubles as a marinade. Its sharp lime is the kind of sour flavour Richberry loves to play with.

Zesty. Herby. Bright.

Ingredients

  • 1 jalapeño pepper seeded and roughly chopped
  • 1 clove garlic
  • ¾ teaspoon fresh ginger, minced
  • ¼ cup lime juice
  • 2 teaspoons balsamic vinegar
  • ½ teaspoon salt, or to taste
  • ¼ cup cilantro leaves, packed
  • ½ cup extra-virgin olive oil

How to make it

  1. Chop the aromatics

Put the jalapeño, garlic and ginger in a food processor or blender and pulse until finely chopped.

  2. Add lime and cilantro

Add the lime juice, balsamic vinegar, salt and cilantro, then pulse a few times to mix.

  3. Blend in the oil

With the motor running, pour in the olive oil in a slow, thin stream until the dressing comes together. Taste and add more salt if needed.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.
