Sweet moments, naturally.

Ingredients

Coconut whipped cream

  • 1 (14 oz) can full-fat coconut milk
  • 1 tsp natural vanilla extract
  • 1 tbsp sugar

Pudding

  • ⅓ cup unsweetened almond milk or other dairy-free milk
  • 4 medium ripe avocados, pitted and peeled
  • ¾ cup raw cacao powder or unsweetened cocoa powder
  • ¾ cup pure maple syrup
  • ¼ cup smooth peanut butter
  • 1 tsp natural vanilla extract

To serve (optional)

  • ½ cup sliced raw almonds or peanuts
  • 2 cups fresh strawberries, sliced lengthways

Directions

  1. Chill the coconut milk.

The night before, stand the unopened can upright in the fridge for at least 8 hours so the cream separates and firms up. Don't shake or tip it.

  2. Scoop out the cream.

Chill a large mixing bowl for 15 to 30 minutes. Open the can without tipping it, spoon the thick cream from the top into the cold bowl and stop when you reach the liquid; save that for smoothies.

  3. Whip the coconut cream.

Beat the cream on high for 2 to 3 minutes, until light and fluffy with soft peaks, taking care not to overbeat. Add the vanilla, beat a few seconds more and keep chilled.

  4. Blend the pudding.

Blend the almond milk, avocados, cacao, maple syrup, peanut butter and vanilla on high for 30 to 60 seconds, until smooth and creamy.

  5. Assemble.

Divide the pudding among four glasses or dessert bowls. Top each with 2 tablespoons nuts, a layer of sliced strawberries and a dollop of coconut cream.

Assemble up to 2 hours ahead; after that the avocado starts to discolour.
