Chocolate chip pancakes with raspberry sauce
Sweet moments, naturally.

Ingredients

Raspberry syrup

  • 2 cups (about 9 oz) frozen raspberries
  • ½ cup water
  • 2 tsp lemon juice
  • 1 ¼ tsp cornstarch

Pancakes

  • 1 ¼ cups (about 5 ½ oz) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp kosher salt
  • 1 ¼ cups buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup mini dark chocolate chips
  • butter, for the pan

Directions

  1. Make the raspberry syrup.

Stir the raspberries, water, lemon juice and cornstarch together in a small saucepan. Cook over medium-high heat until the berries break down and the mixture boils, then boil for 3 to 5 minutes, until thickened. Set aside to cool.

  2. Mix the batter.

Whisk the flour, baking powder, baking soda and salt in a medium bowl. In a second bowl, whisk the buttermilk, egg and vanilla, then stir gently into the flour mixture, breaking up any big pockets of flour; a few small lumps are fine. Fold in the chocolate chips.

  3. Cook the pancakes.

Heat a large nonstick skillet or griddle over medium heat and swirl in a pat of butter. Ladle in about ¼ cup batter per pancake and cook until the underside is golden and bubbles cover the top, then flip and cook until golden on the other side.

  4. Serve.

Repeat with the remaining batter, adding butter as needed. Serve warm, drizzled with the raspberry syrup.
