Ingredients
- 3 cups pitted cherries, fresh or frozen
- 2 tbsp lemon juice
- ¼ cup whole milk (or half-and-half or cream, for a creamier version)
- 1 ½ cups non-fat yogurt
- 2 tbsp almond liqueur, such as amaretto (optional)
- ¾ cup sugar
Directions
Cook the cherries.
Bring the cherries and lemon juice to a simmer in a medium saucepan, mashing them with a potato masher as they heat to release their juice. Take off the heat, cool for 10 minutes, then blend until smooth.
Make the yogurt base.
Stir the cherry purée, milk and yogurt together. Chill for at least 1 hour, or overnight; the colder it gets, the better.
Churn.
Just before churning, stir in the almond liqueur if using; it helps keep the texture smooth. Churn in an ice cream maker for 25 minutes.
Serve or firm up.
Eat it soft straight away, or freeze for a few hours until firmer.
