Blue plate of sliced pear, celery sticks and leafy celery tops scattered with walnut halves, on a burlap mat
Crisp. Fruity. Tangy.

Ingredients

  • 5 ½ oz celery, diced
  • 5 ½ oz Williams pear, sliced
  • 2 oz dried prunes
  • ¼ cup plain set yogurt
  • 3 ½ oz orange (about 1 small), peeled and cut into wedges, peel kept for zesting
  • 2 tablespoons lemon juice
  • 2 tablespoons mustard sauce or prepared mustard
  • Salt and pepper to taste

How to make it

  1. Zest the orange

Use a vegetable peeler to take the zest off the orange, then cut the peeled orange into wedges.

  2. Make the dressing

In a bowl, stir together the lemon juice, orange zest, yogurt, salt and pepper, then whisk in the mustard.

  3. Toss the salad

Add the pear, celery, prunes and orange wedges and mix until everything is coated. Serve on a plate or in small bowls.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

Slice the pear just before mixing and toss it straight into the lemony dressing so it stays pale and crisp.

Serve with

Grilled chicken or pork, or a slice of crusty bread for a light lunch.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
