Cast-iron skillet of yellow rice with chicken pieces, green and red peppers and mushrooms on a rustic wooden table
Hearty. Savoury. Gently spiced.

Ingredients

  • 1 cup brown rice
  • 6 oz chicken sausages, chopped
  • 2 bell peppers chopped
  • 1 teaspoon fresh ginger, shredded
  • 1 teaspoon thyme
  • 1 ½ teaspoons salt
  • ½ tablespoon olive oil
  • 2 ¼ cups chicken stock

How to make it

  1. Fill the slow cooker

Put the brown rice, sausages, bell peppers, ginger, thyme, salt, olive oil and stock into the slow cooker and stir to combine.

  2. Cook low and slow

Cover and cook for 6–7 hours, until the rice is tender and has soaked up the stock.

  3. Fluff and serve

Fluff the rice with a fork and spoon it onto a large round serving dish.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

For a change, use plain chicken pieces instead of the sausages.

Serve with

Serve on a large round platter with lime wedges and a crisp green salad.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
