Broccoli Cheddar Bake
A golden broccoli and cheddar bake that sets gently in a water bath, like a crustless quiche. Sharp cheddar gives it a tangy edge, the kind of sour flavour Richberry loves to play with.

Ingredients
- 4 cups fresh broccoli, chopped
- ½ cup onion, finely chopped
- 2 tablespoons water
- 1 ½ cups egg substitute
- 1 cup fat-free milk
- 1 cup cheddar cheese, shredded (¾ cup for the mix, ¼ cup for the top)
- ½ teaspoon ground black pepper
- Cooking spray for the dish
How to make it
Prepare the dish
Heat the oven to 350°F (180°C) and lightly coat a baking dish with cooking spray.
Soften the vegetables
Cook the broccoli and onion with the water in a nonstick pan over medium-high heat for 5–8 minutes, until tender, adding a splash more water if it dries out. Drain and set aside.
Mix and pour
Whisk the egg substitute, milk and ¾ cup of the cheddar in a bowl, stir in the broccoli and pepper, and pour into the dish.
Bake in a water bath
Set the dish in a larger pan filled with 1 inch of water and bake, uncovered, for about 45 minutes, until a knife pushed into the centre comes out clean.
Top and rest
Scatter the remaining cheddar over the top, then let it stand for 10 minutes before serving.
