Ingredients
- 1 double pie crust dough (top and bottom, for a 9-inch pan)
- 5 cups boysenberries (or blackberries or marionberries), rinsed, picked over and patted dry; thaw and drain if frozen
- 2 tsp lemon juice
- pinch nutmeg
- 3 tbsp quick-cooking tapioca
- 1 egg, lightly beaten, for egg wash
- ¾ cup sugar
Directions
Toss the filling.
Gently fold the berries with the lemon juice, nutmeg and tapioca in a large bowl until evenly coated. Let stand for 30 minutes.
Preheat oven to 400°F (205°C).
Roll one ball of dough into a 12-inch circle on a lightly floured surface and use it to line a 9-inch pie pan. Chill it while you roll the top crust.
Roll the top crust.
Roll out the second ball of dough. For a lattice, cut it into even strips ½ to ¾ inch wide with a knife, pizza wheel or pastry wheel.
Fill and top the pie.
Spoon the berries into the lined pan and cover with the whole crust, or weave the strips into a lattice. Trim the edges to ½ inch, fold them under and crimp to seal; cut vents in a solid top. Brush with the beaten egg.
Bake.
Set the pie on a baking sheet on the middle rack and bake at 400°F (205°C) for 30 minutes. Cover with foil, lower the heat to 350°F (175°C) and bake 30 minutes more, until the crust is browned and the filling bubbles.
Cool completely.
Let the pie cool completely on a wire rack before slicing.
