Ingredients
- 2 cups fresh or frozen mixed berries (strawberries, blueberries, raspberries)
- 1 tbsp lemon juice
- 12 oz Greek yogurt
- fresh berries, to top
Directions
Macerate the berries.
Combine the mixed berries and lemon juice in a small non-reactive saucepan. Leave for 20 minutes so the berries release their juices.
Cook the compote.
Set the pan over low heat and cook for about 5 minutes. Transfer to a bowl to cool; use it right away or keep it covered in the fridge until needed.
Assemble the cups.
Spoon 2 to 3 tablespoons of compote into the bottom of each of 4 glass jars. Top each with about 3 oz Greek yogurt and a few fresh berries.
Serve or chill.
Enjoy straight away, or cover tightly and refrigerate until ready to eat.
