Golden quiche in a fluted tart tin with red pepper, zucchini and chopped greens, and a fork beside it
Smoky. Cheesy. Tender.

Ingredients

  • 4 slices beef bacon
  • 1 tablespoon salted butter
  • 1 medium onion thinly sliced
  • 2 cloves garlic, minced
  • 4 cups baby spinach
  • ¼ cup shredded sharp cheddar cheese
  • 2 large eggs
  • 2 tablespoons heavy whipping cream
  • 1 teaspoon lime juice
  • Salt and ground black pepper to taste

How to make it

  1. Crisp the bacon

Fry the bacon in a hot skillet until crisp. Let it cool, then cut it into rough pieces.

  2. Caramelise the onion

Melt the butter in the skillet over medium heat and cook the onion and garlic until soft and caramelised.

  3. Wilt the spinach

Add the spinach and cook until it just starts to wilt, then stir in the bacon and cheddar until evenly mixed.

  4. Pour in the eggs

Whisk the eggs with the cream and a little salt and pepper. With the heat at medium, pour the eggs over the vegetables and tilt the pan to spread them evenly; don't stir.

  5. Set and flip

Cook until firm and the edges come away from the pan. Slide the quiche onto a flat plate, turn it back into the pan and cook the other side until no longer runny.

  6. Finish with lime

Sprinkle the lime juice over the quiche, cut it into wedges and serve.

The Richberry difference

A naturally brighter taste

Miraculin, the protein in the miracle berry, can make sour flavours taste sweeter for a while. The food itself stays the same; only your taste changes.

Tip

If your skillet is ovenproof, you can set the top under a hot broiler for 2–3 minutes instead of flipping.

Serve with

A crisp green salad with a sharp vinaigrette, or sliced tomatoes and toast for brunch.

Richberry tip

Just before you eat, chew 1–2 halves gently and let them linger for about 30 seconds. Discard any pit.
