Ingredients
- ⅓ cup butter
- 2 eggs
- 1 ½ tbsp orange zest (or more for a stronger orange flavor)
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- ¼ tsp ground cinnamon
- 1 cup plain nonfat yoghurt
- ½ cup golden raisins, chopped
Directions
Preheat oven to 350°F (175°C).
Butter a 4x8-inch loaf pan. For easy removal, lay a wide strip of parchment along the base and up the short sides, and butter that too.
Cream the butter and eggs.
Beat the butter on high for about 2 minutes, until fluffy. Add the eggs one at a time, beating well after each, then beat in the orange zest.
Combine the batter.
Whisk the flour, baking soda, baking powder, salt and cinnamon in another bowl. Add to the butter mixture in thirds, alternating with the yoghurt and starting with the yoghurt, mixing only until just combined. Stir in the raisins.
Bake.
Pour the batter into the pan straight away and bake on the middle rack for 45 to 50 minutes, until a skewer in the center comes out clean.
Cool and serve.
Cool in the pan on a rack for 5 minutes, then turn the loaf out and let it cool for another 10 to 15 minutes before slicing.
