Ingredients

Pastry base

  • 1 cup cold butter, cut into small pieces
  • 2 cups flour

Lime layer

  • ¼ cup flour
  • 4 eggs
  • zest of 2 limes, very finely chopped
  • ⅔–¾ cup lime juice (from 4 to 5 small limes)

Directions

  1. Preheat oven to 350°F (175°C).

Grease a 9x13-inch baking pan and line it with parchment paper. If you're using a glass dish, bake at 325°F (165°C) instead.

  2. Bake the base.

Blend the butter and flour with a pastry cutter or in a food processor, then press evenly into the pan. Bake for 20 to 25 minutes.

  3. Make the lime layer.

Whisk the flour, eggs, lime zest, and lime juice together. Let stand for about 10 minutes, then whisk well again.

  4. Bake the bars.

Pour the lime mixture over the baked base and bake for another 20 to 25 minutes, until the custard is set, the top is lightly browned, and the base is just starting to color at the edges.

  5. Cool and cut.

Let cool completely in the pan before cutting into bars.
