Lime icebox cookies
Sweet moments, naturally.

Ingredients

  • 2 ¼ sticks (18 tbsp, 250 g) unsalted butter, room temperature
  • ½ tsp (4 g) kosher salt
  • 2 large eggs
  • 1 ½ tsp lime zest (from about 1 lime)
  • 4 tbsp fresh lime juice
  • 2 ¾ cups (375 g) all-purpose flour
  • 2 cups (250 g) powdered sugar

Directions

  1. Cream the butter.

Beat the butter and salt with a mixer on low speed for 2 to 3 minutes. It will look sandy at first, then smooth like buttercream.

  2. Add the eggs and lime.

Add the eggs, lime zest and juice and mix on low for 30 seconds; it will look curdled. Raise the speed to medium and beat for 1 ½ minutes more, until fluffy.

  3. Mix in the flour.

On low speed, mix in half the flour until just incorporated. Scrape down the bowl, add the rest and mix just until a soft, sticky dough forms.

  4. Shape the log.

Scrape the dough onto an 18-inch sheet of plastic wrap and shape it into a log about 14 inches long and 3 inches wide. Wrap it up and twist the ends to firm it into a tight log.

  5. Chill the dough.

Refrigerate for at least 1 hour, or up to 1 week, until firm enough to slice.

  6. Slice and bake.

Heat the oven to 375°F (190°C). Unwrap the log, cut ½-inch rounds and arrange them on a parchment- or silicone-lined baking sheet. Bake for 12 to 15 minutes, until the bottom edges are golden brown.

Keep the wrapped log in the fridge for up to a week and bake fresh cookies whenever you like.
