Lemon cookies
Sweet moments, naturally.

Ingredients

  • ¾ cup (170 g) unsalted butter (1 ½ sticks), room temperature
  • ¼ cup (60 g) cream cheese, room temperature
  • zest of 1 medium lemon
  • 2 tsp lemon extract
  • ½ tsp vanilla extract
  • ¼ tsp kosher salt
  • 1 large egg
  • ¼ cup lemon juice (from 1 medium lemon)
  • 2 ½ cups (350 g) all-purpose flour
  • ⅛ tsp baking soda
  • 1 cup (200 g) granulated white sugar
  • ¼ cup (55 g) light brown sugar, packed

Directions

  1. Cream the butter.

Beat the butter, cream cheese, lemon zest, lemon extract, vanilla, and salt in a stand mixer fitted with the paddle until light, fluffy, and clinging to the bowl.

  2. Add the egg and lemon juice.

Beat in the egg and scrape down the bowl, then mix in the lemon juice for about a minute. The mixture may look curdled; that's fine.

  3. Mix in the flour and chill.

Add the flour and baking soda and mix on low until mostly absorbed, then briefly on higher speed until combined. Cover and refrigerate for at least 1 hour, or overnight.

  4. Preheat oven to 375°F (190°C).

Line a baking sheet with a silicone mat or parchment paper.

  5. Shape the cookies.

Roll heaping tablespoons of dough into 1 ½-inch balls, with damp hands if the dough is sticky. Space them 2 inches apart and press with the bottom of a glass into thick disks about 2 inches wide.

  6. Bake and cool.

Bake for 12 to 15 minutes, until the edges start to turn golden. Cool on the sheet for 10 minutes, then lift onto a wire rack with a thin spatula to cool completely.

Store in an airtight container at room temperature for up to 3 days.
