Apple cider glazed donut holes
Sweet moments, naturally.

Ingredients

Donut holes

  • 2 cups (255 g) all-purpose flour
  • 1 ½ tsp baking powder
  • ¾ tsp kosher salt
  • 1 large egg
  • ¾ cup (6 oz / 170 g) sour cream
  • ½ cup apple cider
  • 2 tbsp unsalted butter, melted
  • 1 ½ quarts canola oil, for frying
  • ½ cup (100 g) sugar

Apple cider glaze

  • 4 tbsp apple cider
  • ½ cup milk
  • pinch kosher salt
  • 2 cups powdered sugar

Directions

  1. Set up a drying rack.

Set a wire rack over a baking sheet. The glazed donut holes will drain and set here.

  2. Make the batter.

Whisk the flour, baking powder and salt in a large bowl. In a medium bowl, whisk the egg, sour cream and ½ cup apple cider, then add to the dry ingredients with the melted butter and fold into a very thick batter.

  3. Fry the donut holes.

Heat the oil in a 3-quart saucepan to 350°F (175°C). Drop in scoops of batter (a medium cookie scoop, about 1 ½ tbsp) in batches and fry about 2 minutes per side, until they float and turn golden brown. Drain on paper towels.

  4. Make the glaze.

Whisk the milk with 2 tablespoons apple cider and the pinch of salt, adding more cider a few teaspoons at a time until the glaze is thick. You may not need all 4 tablespoons, since the glaze thins on the warm donuts.

  5. Glaze and serve.

Pour the glaze into a deep bowl or mug. Dip the warm donut holes, spooning glaze over to coat, then lift out with a fork onto the rack to set. Serve straight away.
